Stew with meat and potatoes is a great option for a hearty lunch or an early dinner. It can be prepared both every day and for a festive table.

When choosing pork for a recipe, you should give preference to homemade meat. You can buy at the market or in specialized stores. When purchasing meat from the supermarket, carefully look at its color and expiration date.

You can supplement the stew with absolutely any vegetables. Consider only that some give juice, while others do not, so pick them up according to their juiciness. And also in color, so that the finished dish is more appetizing and colorful.

You can also cook in a slow cooker or oven.

Ingredients:

Pork - 500 gr.

Potatoes - 700 gr.

Zucchini - 1 pc.

Carrots - 3 pcs.

Bulgarian pepper - 1 pc.

Tomato - 200 gr.

Bulb onions - 1 pc.

Vegetable oil - 45 ml

Salt, pepper, spices - to taste

Preparation:

1. Prepare all the required ingredients according to the list.

2. Rinse the pork under running water, dry it, remove streaks, excess fat and cut into small cubes. Transfer the meat to a preheated pan with vegetable oil and add salt, black pepper, spices to taste. Olive or mustard oil can be substituted for vegetable oil.

3. Fry the meat for 7 minutes over low heat without a lid. Peel the potatoes and cut into cubes. Peel the bell peppers from the seeds, chop randomly and add with the potatoes to the pork. Pour in some vegetable oil and season to taste.

4. Stir and simmer for 10 minutes over low heat, covered. Cut the courgette into medium cubes. If they are bitter, then salt and leave for a few minutes to let the juice flow. Peel and cut the carrots into rings or cubes. Add zucchini, carrots, and spices to taste with the rest of the vegetables.

5. Mix everything again and simmer for 8-10 minutes over low heat under a closed lid. Peel the onions from the husks, cut the tomatoes into cubes and transfer to the pan with the rest of the ingredients. You can replace the onions with green onions, I use only the white part without feathers.

6. Mix everything well and cook for another 5 minutes over low heat, covered. Then leave for a few minutes so that the potatoes with meat absorb all the aromas and tastes.

7. Put the finished stew with meat and potatoes into plates and serve.

Sprinkle with chopped parsley, dill, or chopped spring onions before serving, if desired.

As for the sauce, it is best to cook it spicy. For example, tomato, chili, adjika, Greek yogurt, and spices to taste. It will also be delicious with sour cream, ketchup, satsebeli or tomato paste.
