Chicken fried rice is a great option for a nutritious, flavorful and delicious meal. The cooking process is quite simple, but the result is a wonderful dish that many will cook all the time. It can even decorate a festive table.

When choosing chicken, give preference to homemade meat. You can buy it in the market or in specialized stores.

You can take absolutely any rice, for example, black, parboiled or red. Such cereals will give the dish not only taste, but also color. I advise you not to take rice that does not require cooking.

Ingredients:

Rice - 1 glass

Chicken fillet - 600 gr.

Eggs - 2 pcs.

Onions - 1 pc.

Carrots - 200 gr.

Champignons - 200 gr.

Greens to taste

Soy sauce - 70 ml.

Vegetable oil - 40 ml

Salt, black pepper, spices - to taste

Preparation:

1. Prepare all the required ingredients according to the list.

2. Rinse the chicken fillet under running water, remove streaks, films and excess fat, if any. Cut into small pieces and transfer to a preheated skillet with vegetable oil, add salt, black pepper and spices to taste. For the recipe, it is not necessary to take only fillets, you can use the thighs or wings. Only then is it best to cook them in the oven and add them to the rice before serving.

3. Fry the meat for 4-6 minutes over low heat under a closed lid. Peel the carrots and grate on a coarse grater. It is not necessary to peel the peel if you took a young one. Peel the onions and cut into medium cubes. You can replace it with green without using feathers. Add vegetables to the pan with the meat.

4. Stir and cook for 3-4 minutes over medium heat, stirring occasionally. Peel the mushrooms, cut into small pieces and add to the rest of the ingredients. They can be replaced with chanterelles or porcini mushrooms.

5. Mix everything and simmer for 2-3 minutes. Pour the soy sauce into a deep bowl, break the eggs there and add spices to taste. There is no need to add salt at this stage, because there is enough salt in the sauce.

6. Whisk the egg mixture well with a fork or whisk and pour into the skillet.

7. Pour rice groats into a saucepan and cover with water in a 1: 2 ratio. Add salt and cook for 12-15 minutes over low heat without stirring. Then add the turmeric and paprika to taste.

8. Stir and transfer to skillet with chicken. Pour in some oil and fry the rice with vegetables and meat for 6-7 minutes over medium heat under the lid closed.

9. Pour the cooked chicken fried rice into bowls and serve.

Sprinkle with chopped parsley, cilantro, dill, or chopped green feathers before serving.
