Almost the easiest spring salad to prepare is cucumber, egg and green onions, which is perfect for both lunch and dinner. It is created in the spring season, when the first juicy greens and vegetables are already available.

The dish is seasoned with sour cream or mayonnaise of any fat content, but when a dairy product is added, the shelf life of the salad is reduced to 1 day, so it is not recommended to cook it for future use.

Onions can be replaced with green garlic or pickled garlic arrows if you like spicy flavors, but you should not change fresh cucumbers for salted ones. Do not forget to complement the salad with dill, parsley, etc.

Ingredients:

Fresh cucumber - 2 pcs.

Boiled chicken egg - 2 pcs.

Green onions - 0.5 bunch;

Sour cream - 3 tbsp.

Preparation:

1. Rinse fresh cucumbers thoroughly in water, peeling off the thorns on their surface. If the vegetables are tight, it is best to peel them off with a peeler or cut them with a knife, leaving juicy flesh. Cut the tails off the cucumbers on both sides. Cut vertically in half and cut into half rings, placing in a deep container. If desired, vegetables can be cut into small cubes, cubes, etc.

2. Boil chicken eggs for 12-15 minutes in boiling salted water in advance, then cool sharply in ice for another 15 minutes, since the salad is created only from chilled ingredients. Peel off the shell from each egg and rinse it in water, excluding the slightest getting into the dish. Cut the eggs into medium cubes and add to the container.

3. Rinse the green onion feathers and chop them, add to the rest of the cuts in the container. Optionally, you can supplement the dish with chopped dill, parsley, etc. Green onions can be pre-mash with a potato press to release the juice from the slices.

4. Put sour cream or mayonnaise of any fat content, salt and pepper the dish. Instead of sour cream, it is important to use thick classic yogurt without flavorings.

5. Gently mix the contents of the container together so that all the products are covered with sauce.

6. Put the cooked salad of cucumber, eggs and green onions in bowls or deep plates, salad bowls, serve immediately after cooking, decorate with fresh herbs.

This dish is satisfying in itself, but contains practically no carbohydrates, so it can be easily served for dinner, even for those who follow a diet!
