Cooking a simplified and less nutritious version of mushroom julienne - mushrooms fried in a pan with onions and sour cream. Portioned cocotte makers are not required. There is no flour or other thickeners in this dish, and all the action takes place quickly and on an overhead fire.
To reduce the release of moisture, cut the mushrooms into quarters or in half, leave small specimens whole - then the mushrooms will remain fleshy, springy and delight in taste.
Ingredients:
Champignons - 400 g
Small onion - 2 pcs.
Sour cream - 150 g
Hard cheese - 40 g
Greens - 20 g
Vegetable oil - 30 ml
Salt, black pepper - to taste

Step 1 - For homemade champignons fried with onions and sour cream, take the foods listed. Ideally, fresh, small, strong mushrooms without pre-freezing. Sour cream can be with any percentage of fat, decide on your own to lower the calorie content or not. In addition, heavy cream is suitable instead of sour cream. The most delicious and aromatic snack comes from home / farm sour milk products. The final touch is given by the cheese - I recommend it from goat's milk, mature and with "character".
Step 2 - Heat a skillet with a rim, then pour in the vegetable oil (corn or sunflower refined) - after 30 seconds into hot fat, load chopped into thin half rings bulbs. For a light caramelization, toss in some salt, stir and sauté until the onion is clear and pliable.
Step 3 - Rinse the mushrooms thoroughly to remove soil residues with cold water. Cut each champignon into four equal parts. Transfer the mushroom slices to the buttered onions. After stirring, fry the mushrooms until golden brown (about 10 minutes). First evaporate all the liquid, and then brown.
Step 4 - Pour in sour cream, season with salt and ground hot pepper - stir and simmer for 2 minutes. Remember, when using salted cheese, the salt should be much less.
Step 5 - Remove from heat, immediately sprinkle the hot pan with cheese shavings and chopped fresh parsley with dill. The cheese melts instantly and combines with the gravy.
Step 6 - Serve the mushrooms fried with onions and sour cream hot as a main dish, side dish or appetizer.
