Fried potatoes with mushrooms and onions

Fried potatoes are simple and easy to prepare, yet delicious and satisfying. Many prepare it every day, and some supplement it with vegetables, meat and serve it on the festive table.

Mushrooms and onions go well with potatoes, and carrots give the finished food not only taste, but also color.

For the recipe, you can take absolutely any kind of mushrooms. Champignons are the most common option. They also add porcini mushrooms, chanterelles, shiitake, etc.

Ingredients:

Potatoes - 500 gr.

Mushrooms - 300 gr.

Onions - 1 pc.

Carrots - 150 gr.

Greens to taste

Vegetable oil - 35 ml

Salt, pepper, spices - to taste

Preparation:

1. Prepare all the required ingredients according to the list.

2. Wash the potatoes, peel, cut into medium slices using a curly knife. Its use when slicing will give the dish a more presentable look and uniqueness. Peel the carrots and cut into rings. If you took a young carrot for the recipe, then you do not need to peel it, it is enough to wash it thoroughly under running water. Transfer vegetables to a preheated skillet with vegetable oil and add spices, black pepper and salt to taste. Olive or mustard oil can be substituted for vegetable oil.

3. Stir and sauté over medium heat for 7-10 minutes, uncovered.

4. Peel the onions and cut into half rings. You can replace onions with green onions, using only the white part without green feathers for frying. Soak the mushrooms in water for 10 minutes, then dry, peel and cut into small cubes. Add onions, mushrooms to the rest of the vegetables, add a little vegetable oil, add salt and spices. Remember, mushrooms tend to take in a lot of salt.

5. We mix everything and fry for another 5-10 minutes on low heat under a closed lid.

6. Put the finished fried potatoes with mushrooms and onions into plates and serve. Sprinkle with chopped parsley, dill, cilantro, or chopped green onions before serving, if desired.

This dish is ideal as a side dish for beef, pork or lamb, but it can also be independent, for example, for lunch or an early dinner.

As for the sauce, it is best to make a garlic sauce with walnut yogurt, garlic, lemon juice and spices to taste. However, it will also be delicious with tomato, sour cream, as well as with everyone's favorite ketchup or mayonnaise.

Along with the dish, you can serve chopped vegetables or prepare a light vegetable salad of fresh tomatoes, cucumbers and bell peppers, seasoned with olive or mustard oil.
