Dessert sorrel pie made from puff pastry turns out to be crispy, with a pleasant sourness, and it is easy and very quick to prepare it. Baking with such a filling is not only tasty, but also healthy, because sorrel is rich in vitamins. To prevent its sweet juice from flowing out, I add a little starch. Puff pastry is suitable for both yeast and yeast-free, you can buy ready-made or cook it yourself. I prefer to use yeast, it is higher when baked.
Ingredients:
Puff pastry - 250 g
Sorrel - 2 bunches
Sugar - 80 g
Egg yolk or quail egg - 1 pc.
Potato starch - 1 tsp
Step by step recipe:
Step 1 - We prepare the necessary products according to the list. We take out the puff pastry in advance, an hour before baking. After dusting the countertop with flour, leave it on the table at room temperature.
Step 2 - We wash the sorrel, shake off excess moisture well. Cut off the petioles from the leaves.
Step 3 - Finely chop the sorrel leaves, put them in a bowl.
Step 4 - Lightly wrinkle with our hands so that the leaves become soft.
Step 5 - Add starch, sugar to the sorrel and mix. The filling is ready.
Step 6 - Now we roll out the layer of puff pastry. On one side of the square we make short cuts, I do not use an ordinary knife, but a dough cutter for pasties.
Step 7 - Spread the sorrel filling in the center.
Step 8 - Cover the filling with one side of the dough, pinch around the perimeter. Press well with your fingers so that the cake retains its shape during baking.
Step 9 - Overlap with the edge of the dough that we have with incisions, we also pinch it well.
Step 10 - We transfer the workpiece to a baking sheet covered with parchment. Break the quail egg (or egg yolk) into a bowl, stir well. Lubricate the surface of the future cake. When I do not use the whole package of puff pastry, I take a quail egg, it is just enough.
Step 11 - We put the baking sheet in a preheated oven to 180 ° C, bake the cake until golden brown for 25-30 minutes - be guided by your technique.
Step 12 - Sorrel puff pastry pie is ready. Let it cool down a little, cut it and serve it to the table.
