Colorful raspberry jelly is the perfect dessert for hot summer days, it can even be served for breakfast with fresh pastries and a cup of tea or coffee. For this delicacy, you can use both fresh and frozen raspberries, it freezes for about 1 hour in the cold.

Optionally, you can add granulated sugar, honey or sweetener, and replace gelatin with agar-agar if you are a vegetarian. The main thing is to carefully dissolve the granules of the gelling powder in hot water so that the texture of the dessert does not come out with lumps.

Rinse the containers in which the jelly will solidify in advance and wipe them dry: glasses, cups, bowls, bowls. Leave a few berries for garnish if making a dessert with fresh raspberries.

Ingredients:

Gelatin - 20 g

Raspberries - 250 g

Water - 200 ml

Sugar - 70 g

Preparation:

1. Prepare the required ingredients.

2. Rinse fresh or frozen raspberries in water, if possible, removing cuttings and other debris, pour into a container: a cauldron, a saucepan or a saucepan with a non-stick bottom. Add granulated sugar and a pinch of citric acid, if desired.

3. Pour in 150 ml of hot water and place the container on the stove, turning on maximum heat. Leave 50 ml of hot water for the gelatin. As soon as it boils, reduce heat to minimum and simmer the berries for about 2-3 minutes until the sugar crystals are completely dissolved.

4. Then rub the sweet raspberry mass through a fine mesh strainer, remove the cake - you can make tea or fruit drink from it.

5. Pour 50 ml of hot water into a separate deep container, pour gelatin into it and let it swell for about 5 minutes, then stir thoroughly for another 2-3 minutes until the granules are completely dissolve.

6. Pour water with a gelling agent dissolved in it into raspberry juice, mix thoroughly. Do not heat - gelatin may lose its properties when heated.

7. Pour the sweet liquid into prepared containers, not adding lightly to the brim. Place them in the cold. If you use the refrigerator, first cool the raspberry jelly at room temperature and only then move the pieces to the refrigerator. It will take about 50-60 minutes to harden.

8. Dessert is considered completely ready when it is frozen both outside and inside.

Garnish the raspberry jelly with butter cream, whipped cream or sour cream, fresh raspberries, and mint leaves. Serve chilled.
