Lush pancakes with kefir and soda

Pancakes are fluffy small-diameter flatbreads fried in a pan. This delicacy reminds many of childhood. Pancakes are often served for breakfast. There are a lot of recipes for their preparation.

In order to prepare fluffy and tasty pancakes, you do not need to spend a lot of time and effort. Mixed with kefir and soda, they always turn out to be perfect, the main thing is to observe the proportions and some of the nuances of cooking.

A little about the choice of kefir: the optimal fat content of the fermented milk product is 2.5-3.5%. If you use low-fat kefir, pancakes may turn out to be too thin and not fluffy enough.

Ingredients:

Kefir - 250 ml.

Sugar - 1 tablespoon

Soda - 0.5 tsp.

Flour - 250 g.

Egg - 1 pc.

Vegetable oil - 50 ml.

Step by step recipe:

1. Prepare the required set of ingredients. Remove kefir from the refrigerator in advance so that at the time of cooking it becomes room temperature. Sift the flour several times - it will be saturated with oxygen and the dough will be more airy.

2. Pour kefir into a suitable bowl, add sugar and soda. Mix well and let sit for a couple of minutes. A reaction should occur between kefir and soda: the liquid will foam and bubbles will appear. It is not necessary to extinguish soda with anything, since we add it to the fermented milk product.

3. Beat in an egg and stir again.

4. Add the sifted flour.

5. Stir. You do not need to knead the dough for a long time, let it remain slightly lumpy. It will turn out to be quite thick and will “lazily” roll off the rim.

6. Chop the pan with vegetable oil well and lay out the dough, forming small pancakes.

7. When the dough sets a little and bubbles appear on the surface, the pancakes need to be turned over. They are fried for about 2-3 minutes on each side. Transfer the finished pancakes to a paper towel to remove excess oil.

8. Delicious, fluffy and soft pancakes are ready.

These pancakes will be a great start to a new day. They are served warm with different delicacies: sour cream, jam, condensed milk or honey. And also - with a cup of aromatic tea or milk.
