Cut the meat into long sticks of about the same size as for beef stroganoff. Then the pork stewed in sour cream will be evenly saturated with tasty vapors, thoroughly softened and will delight you with juiciness.
If you get home / country sour cream, cook with it. The dish will turn out to be especially appetizing, with a pleasant sour-milk aroma.
Ingredients:
Pork - 500 g
Sour cream - 200 ml
Garlic - 3 teeth.
Flour - 30 g
Butter - 30 g
Salt, black pepper - to taste
Step by step recipe:
Step 1 - Take the groceries on the list. Sour cream should be with a high percentage of fat (20% or higher), can be replaced with heavy cream. Choose pork pulp without tough connective tissue and a lot of fat.
Step 2 - Rinse the meat with cold water, wipe dry with paper, if necessary, remove the film, fat layers. Cut into sticks across the grain.
Step 3 - Place the meat chunks in a food bag or bowl, add a serving of wheat flour and stir well. Cover each slice with a thin layer of flour, shake off the excess.
Step 4 - Spread the floured pork sticks inside a spacious pan or pan - spread evenly over the entire area. Add garlic cloves, cut into thin slices or pressed through a press. Garlic, mixed with sour cream, leaves an incredibly tasty aroma. In addition, for supporters of the classic beef Stroganoff, it is appropriate to chop onions.
Step 5 - Fill the pork with sour cream, salt on top and season with chopped hot pepper. If you want - use spicy herbs, more spicy additives.
Step 6 - Spread out the "islands" of butter last. Do not substitute surrogates such as margarine. The butter will make the delicate creamy taste more expressive. Put the pork in sour cream in the oven for 30-40 minutes. Cook at 170 degrees under a sheet of foil or lid. Do not forget to preheat the oven. Check periodically to see if there is enough moisture, and if the meat is still tough / raw, add an extra portion of sour cream.
Step 7 - Serve the pork in sour cream with fresh vegetables and herbs, if desired, with a side dish of cereals, mashed potatoes or pasta.
