Mexican Rice is one of the most popular side dishes in the world. Such a mixture of vegetables is sold, as a rule, frozen. You can buy it all year round at any grocery store that has a freezer department.
This favorite side dish is prepared quite simply and quickly, with little skills, it will take you less than half an hour. From meat dishes, anything that you constantly cook for a family for lunch or dinner will suit it.
Ingredients:
Mexican mix - 200 g
Round rice - 150 g
Bulb onions - 1 pc.
Vegetable oil - 2 tbsp.
Salt to taste
Ch.m. pepper - taste
Preparation:
1. Prepare foods from the list. I really like to use round rice, it is more starchy, but if you like jasmine or basmati, feel free to use these varieties.
2. Rinse the cereals to clean water, pour in a ratio of 1 to 2, put on high heat. As soon as it boils, cover the cauldron tightly with a lid and cook the rice for 15 minutes. During this time, the water will completely boil away, and the cereal will cook. After a while, let it go under the lid for some more time, about 10 minutes.
3. At the same time, heat unscented refined vegetable oil in a frying pan, put in it onion, chopped in half rings, fry over medium heat for 3-4 minutes, until soft and sweet taste.
4. You do not need to defrost the frozen Mexican vegetable mixture, immediately add it to the pan, cover with a lid. The vegetables will release water and cook faster. Fry vegetables for 5 minutes, no longer.
5. Loosen the cooked rice in a cauldron with a fork or spoon.
6. Transfer it to the vegetable skillet. Season with salt and pepper to taste, mix well. Warm up for a minute or two. For flavor and aroma, you can add your favorite rice spices, I really like this dish with cumin seeds (cumin).
7. Divide cooked rice with Mexican mixture into portions and serve on its own or as a side dish to any meat and fish dishes.
