Having decided to make your own wine, you need to learn a few important recommendations from experienced winemakers. This will allow you to avoid serious mistakes, resulting in a delicious and original drink.
Do not use metal containers
The correct container is a very important factor in wine production. It is better to choose barrels and containers made of wood, glass, enamel. But it is forbidden to use metal dishes, as this will significantly spoil the taste of the wine.
Choosing the right ingredients
Always choose ripe fruits. Using spoiled or slightly moldy material will spoil the drink.
Maximum juice is a guarantee of bright taste
After grinding, you need to turn the fruits into pulp, from which juice will then be obtained. It is advisable to squeeze the ingredients with a nylon cloth press.
An important point is the acidity of the juice
Working with juice of berries and fruits is very scrupulous, requires careful attention, because 80% of the taste of this drink depends directly on the base. For example, the juice of grapes, some varieties of pears and apples does not require additional processing. But the rest should be relatively carefully, if necessary, adjusting the acidity.
This process is called wort preparation. There are two methods:
1. Fruit juice is diluted with soft water - hard water, on the contrary, will lower the acidity.
2. Using pure chalk - the liquid is mixed with it, left to precipitate. True, the wine will taste like drugs as a result of such processing.
Fermentation control
If a week after you put the wine on, the fermentation process has not started, you need to add brewer's yeast to the container: 1 g of product per 1 liter of juice.
Tip: be sure to remove the sediment. This will avoid turbidity, bitterness of the drink.
