Tomato sauce for pizza

It is difficult to imagine a juicy and aromatic pizza without a colorful sauce made from ripe tomatoes and aromatic basil. It is prepared in literally half an hour, if you have red-sided tomatoes with fleshy pulp, and the variety of the spicy plant can be anything: green or red - depending on what kind of pizza you are going to make. Pizza "Margarita" just includes the following ingredients: a base of dough, sauce, tomatoes, green basil and mozzarella.

By the way, if there is no fresh spice, then you can use dried, the main thing is the aroma! Be sure to taste the tomatoes before cooking them, as vegetables can taste be different: add a little more granulated sugar to sour tomatoes, add the rate specified in recipe.

Ingredients:

Tomatoes - 600 g

Green basil - 0.5 bunch

Salt - 0.5 tsp

Ground black pepper - 2 pinches

Sugar - 1 tsp

Apple cider vinegar - 0.5 tsp

Vegetable oil - 1 tbsp.

Preparation:

1. Rinse fleshy tomatoes, put in a deep bowl or basin. Boil water in a kettle or saucepan, pour it into a container with tomatoes and leave for 10-15 minutes, then transfer them to cold water for 5 minutes.

2. Peel the peel from the tomatoes by cutting them crosswise from the bottom. Cut green cuttings from each fruit and cut all peeled tomatoes into a container into slices or cubes of your choice.

3. Transfer the tomato pulp to a saucepan or small cauldron. Rinse the green basil stalks in water, tear off the leaves from them and chop them on a plank. Add together with salt and ground black pepper to a container, add granulated sugar and mix gently. Turn on maximum heat and cover to avoid splashing.

4. Simmer for about 5-10 minutes, reducing heat to a minimum, until the tomato mass changes its color. During this time, the juice will stand out, the spicy herbs will give the sauce its flavor.

5. Purée the whole mixture with a hand blender, turning into a thick sauce. If it nevertheless is liquid, then in any case it can be boiled down to the required density. Return the container with the sauce to the stove, be sure to cover and simmer for about 15-20 minutes.

6. After the sauce has boiled down, it is completely ready to use both hot and chilled.

The product is stored for about 1 week in the refrigerator, if desired, it can be frozen by filling it in taps or small containers to always have the necessary ingredient to create a fragrant pizza.
