A universal appetizer for both a hospitable festive table and a modest feast or a buffet table - herring canapes. Tasty, quite presentable and very convenient. The successful combination of products and minimalism of execution captivates: on a slice of rye bread, fillet of fat herring and some vegetables.

Ingredients:

Herring fillet - 200 g

Beets - 1 pc.

Rye bread - 200 g

Mayonnaise - 30 g

Cucumber - 1 pc.

Red onion - 0.25 pcs.

Greens, salt, black pepper - to taste

Step by step recipe:

Step 1 - To make herring and black bread canapes, take the food listed. If you pre-bake the beets, everything will take no more than 10 minutes to complete. To do this, wrap a clean root vegetable in foil and bake in a hot oven until soft. Typically an hour is sufficient for medium-sized beets at 200 degrees. I recommend rye bread with a dark crumb and an expressive flavor. Can be dried in a toaster, skillet or oven.

Step 2 - Divide the herring fillet into equal pieces, remove all the bones and lay out on a napkin to remove the remaining oil (if the fish was in oil or brine). We determine the size, shape of our future canapes. For example, we cut out one template and fit all the others under it. Separate the crusts. I have rhombus-shaped bread slices but can be easily changed to squares, triangles or rectangles. The main thing is to stick to one thickness, then the mini-sandwiches will look neat.

Step 3 - Peel the baked and cooled beets ahead of time and mix with three thin shavings (for example, on a cheese grater) and mix with mayonnaise. Salt and pepper if necessary; chopped garlic is often added for pungency.

Step 4 - Take freshness from cucumber and red or onions. Shred thinly, almost transparent long slices of cucumber and half-rings onion.

Step 5 - Having finished with the slicing, proceed to assembling the miniature open sandwiches. On bread slices, spread the beets seasoned with mayonnaise on a hill. Then we place pieces of herring, decorate on top with onions and flexible cucumber plates, leaves of fresh herbs. Pepper slightly. The canapes can be pierced vertically with a skewer.

Step 6 - Serve cold appetizer - black bread canapes with herring and cucumber - to the table.
