Today, pork liver is one of the most budgetary products, everyone can afford it. You can cook a large number of dishes from it. Pork liver salad is incredibly tasty and satisfying, it is one of the most popular on the festive table - it is eaten by guests first. If you are a lover of offal and you manage to buy fresh liver, be sure to try this salad, you will definitely like it.
Ingredients:
Pork liver - 500 g
Bulb onions - 1 pc.
Champignons - 150 g
Pickled cucumber - 100 g
Black olives - 10 pieces
Salt to taste
Ground black pepper - to taste
Mayonnaise - 2 tablespoons
Vegetable oil - 1 tbsp.
Parsley - optional
Chicken egg - optional
Preparation:
1. Prepare foods on the list. Peel the onion, wash. Clean the mushrooms with a hard kitchen sponge. Free the pork liver from films, remove the vessels, wash under running water, pat dry with paper towels.
2. Heat vegetable oil in a frying pan, fry the onion chopped in half rings in it for several minutes. Add the sliced mushrooms. When the mushrooms start to juice, keep them in the pan for another 2-3 minutes. Turn off the stove, cool the mushrooms and onions.
3. At this time, boil water in a saucepan, salt it, put the liver. In boiling water, the protein will instantly curl up and the offal will be cooked in clean and transparent water with a minimum amount of foam. Remove the foam and cook the liver for 20-25 minutes, if the piece is not too thick, this time will be enough. If absolutely clean and transparent juice flows out during a puncture, it is ready. It is very important not to overdo it, otherwise it will become rubbery and bitter. Cool the prepared liver.
4. Carefully remove the mushrooms and onions from the pan, being careful to leave all the oil in it, transfer them to a deep bowl. Add the pickled cucumber cut into strips and the pitted black olives. At this stage, I also add a boiled chicken egg, but that's up to you.
5. Cut the liver into thin strips, place in a bowl with the rest of the ingredients, salt and pepper to taste.
6. Season the salad with good quality mayonnaise and stir.
Serve the prepared pork liver salad with mushrooms and pickled cucumber immediately after cooking.
