Filling

  • cottage cheese - 800 g
  • coconut flakes - 80 g
  • sugar - 4 tbsp. l.
  • sour cream - 1-2 tbsp. l.
  • raspberry jam - 80 g

Step by step recipe

1. First, let's prepare the pancakes.
Break 2 eggs into a bowl. Pour in 0.3 tsp. l. salt and 1 tbsp. l. Sahara. Mix everything until smooth.

2. Pour about 200 ml of warm milk here, mix again.

3. Sift 150 g flour and 20 g cocoa into a bowl. For this dough, flour does not need to be sieved, but cocoa must always be sieved. Since it will be grains in the dough. Mix everything with a mixer.

4. Pour the remaining 200 ml of warm milk into the prepared dough and mix. In total, 400 ml of milk will be needed for the recipe.

5. At the very end, add 2 tbsp to the dough. l. vegetable oil so that the pancakes do not stick to the pan. Mix again. Be sure to let the finished dough rest for about 15 minutes.

6. The dough is rested, we fry the pancakes.
Lubricate the preheated pan before the first pancake with vegetable oil, then you do not need to grease the pan. Each time, before taking the pancake dough, you need to stir it a little. Pour the dough into the pan and distribute it evenly over the entire bottom by tilting the pan. Cook pancakes on a slightly less than medium heat.

7. When the pancake is cooked on one side, turn it over to the other side. Fry for another half a minute and remove on a plate. Thus, we prepare all the pancakes.
If your dough is too thick, then you can add a little more milk or water. Conversely, if the dough is thin, then you need to add a little more flour. From this amount of dough, I got 15 pancakes.

8. Preparing the filling for pancakes.
Put 800 g of cottage cheese in the chopper bowl and add 4 tablespoons. Sahara. Grind until smooth. If the cottage cheese is dry, then you need to add 1-2 tbsp. l. sour cream. Grind everything until smooth.

9. Transfer the finished curd mass to a bowl. Pour 80 g of coconut to the curd. We change everything. The filling is ready.

10. We start pancakes.
We put the pancake and grease it with curd-coconut mass. On top, from one edge of the pancake, put 1 tbsp with a strip. l. raspberry jam. We fold the pancake. So we fill all the pancakes.

11. Cut the finished pancakes in half. We spread it on a plate. Top with pancakes, for beauty, you can sprinkle a little coconut.
