For morning toast, muesli / porridge, cheese plate, desserts, pancakes and other sweet pastries, prepare pear jam, delicate in consistency and delicate in aroma. If you are going to replenish stocks for the winter, then all containers (sterilize the cans and lids first, and close tightly after packaging).
For quality jam, choose ripe pears that are free from mold and rot. If desired, additionally flavor with spices, or five minutes before the end of cooking, throw in a spoonful of dry poppy seeds, crushed nut kernels.

Step by step recipe:
Step 1 - To make pear jam at home, take the foods on the list. In my step-by-step recipe, the weight is for peeled and chopped fruit pieces (pear cut = 600 g per 250 g granulated sugar). For not too sweet and juicy fruits, the portion of sugar can be increased. Sometimes hard pears are pre-scalded or boiled without sugar. For those who decide to speed up the process - soften, let the juice out - I recommend using a grater or chopper / food processor. Small pieces of pears release moisture / juice faster and boil down.
Step 2 - No matter how delicate the skin is, peel the pears for jam. Remove the stumps and cut into pieces of any shape. We put in a chopper bowl, grind or three on a coarse grater by hand.
Step 3 - We transfer to a heat-resistant container, suitable for long-term cooking without burning. We do not add any additional water or other liquid.
Step 4 - Immediately cover with sugar and, stirring, put on an overhead fire. We warm up and immediately observe the release of liquid. Sugar begins to melt instantly.
Step 5 - Put a pinch of chopped cardamom, with it the treat will get a lollipop chill - a duchess flavor. We look closely, maintain a moderate boil, sometimes stir with a spoon in a circle and boil for about 25-30 minutes until transparent.
Step 6 - Grind the grainy, heterogeneous composition to a silky and thin consistency.
Step 7 - Fill sterile jars with hot sweetness, close tightly and cool at room temperature. Then we store it on the refrigerator shelf.
Step 8 - Serve delicious pear jam for breakfast, afternoon tea and tea. Bon Appetit!
