If you are against impurities in minced meat, value the meaty taste as much as possible, then cook cutlets without bread, flour, starch, potatoes, cereals and other additives designed to increase the number of products at the exit. The recipe is relevant for any meat, including poultry.
Ingredients:
Minced chicken - 600 g
Onions - 0.5 pcs.
Garlic - 1 tooth
Egg - 1 pc.
Ground crackers - 50 g
Vegetable oil - 50 ml
Salt, hot pepper - to taste
Step by step recipe:
Step 1 - To make minced meat patties without bread at home, take the foods on the list. For frying, choose refined sunflower or corn oil. Add ground dried herbs to the spices, if desired. Breaded in ground breadcrumbs or wheat flour - breadcrumbs give a crisper and oily crust. In my example, minced chicken cutlets, but pork, beef, mixed platter are formed in the same way. It is important that solid fillet pieces pass through the meat grinder.
Step 2 - For chicken or minced meat of another variety, three about half a large onion. Use a fine grater to puree the onion. Next, grind one or two garlic cloves. You can chop finely-finely with a knife or pass through a press. It is garlic and onions that saturate the cutlets with a characteristic taste and distinguish them from other minced meat products.
Step 3 - Drive in the egg. With it, homemade cutlets will become more satisfying, nutritious, more nutritious. In addition, a binder is required.
Step 4 - Salt and add black or other hot ground pepper. Mix everything well. I recommend to beat off the meat mass. Then the elasticity of the fibers will increase and it will be easier to mold the blanks. Place the seasoned patty mince in a sturdy food bag and hit the counter several times. You can also toss the meatball from palm to palm with some effort.
Step 5 - Roughly divide the homogeneous minced meat into 6-7 equal parts. With wet or slightly greased hands, we form round or oval semi-finished products. Sprinkle thickly in breadcrumbs (or flour). Shake off the excess breading. In this form, minced meat cutlets are frozen.
Step 6 - Fry in a hot frying pan with heated vegetable oil on both sides.
Step 7 - Serve minced chicken cutlets hot or warm, with fresh vegetables, herbs, and garnish if necessary.
