Arugula salad with cherry tomatoes and mozzarella

Salad with mustard arugula, mini tomatoes and mozzarella cheese is not only light, tasty and healthy, it is also very cute in appearance. When you use sweet and aromatic cherry, then it is better to take mozzarella in small balls - they will look more pleasant in the finished dish.

I really like to cook this salad on the so-called fasting days, as well as on days of sports training aimed at weight loss. Recently, my husband and son have joined me, so I cook this kind of salads two or three times a week, serve them myself without a side dish.

Ingredients:

Cherry tomatoes 5 pcs.

Mozzarella 125 g

Lettuce salad 40 g

Arugula 30 g

Olive oil 1 tbsp

Parmesan 10 g

Sea salt to taste

Ch.m. pepper taste

Preparation:

1. We will prepare all the products according to the list. Wash fresh arugula and lettuce, shake off the water. We spread the leaves on paper towels, carefully try to dry them and not break them. We remove the tomatoes from the branch and also wash them, dry them.

2. Put clean dry greens on a plate on which you will serve the finished salad. Try to mix the lettuce and arugula.

3. It is better to cut fragrant and sweet tomatoes in half, then it will be more convenient to eat. Place them on top of fresh herbs. If the cherry blossoms are large, they can be cut into quarters, but if they are very small, they can be put whole in the dish.

4. The mozzarella balls can be left whole or cut in half as you prefer. Add cheese to salad, spread randomly throughout the dish.

5. Sprinkle with a good quality olive oil, preferably virgin olive oil, and season with salt and pepper to taste. Add some more clean arugula leaves.

6. Grate Parmesan on the finest grater, sprinkle generously on the dish.

Serve the prepared salad with arugula, sweet cherry tomatoes and mini mozzarella immediately after cooking, while the herbs are fresh and crispy. If you like, you can sprinkle it lightly with red or white wine vinegar, if available.
