Light and bright vegetable salad with tender Adyghe cheese and aromatic dressing can be prepared in less than 15 minutes. It is not only tasty and colorful, but also healthy, because the healing properties of tomatoes and olive oil have been known for a long time.

The salad looks very impressive if you use different varieties of cherry, and its taste will become richer, because, as you know, different types of such tomatoes differ in taste.

Ingredients:

Cherry tomatoes - 14 pcs.

Cucumber - 7 pcs.

Adyghe cheese - 100 g

Basil (leaves) - 5 pcs.

Parsley - to taste

Olive oil - 3 tablespoons

Balsamic vinegar - 2 tablespoons

Salt to taste

Black pepper (ground) - to taste

Step by step recipe:

1. Prepare food. Basil can be used purple or green, it is better to take small cucumbers with thin skin.

2. Make the dressing, it is quite simple: you just need to mix olive oil and balsamic vinegar, add black ground pepper to them and mix everything.

3. Cut the cherry tomatoes in half and place in a suitable bowl.

4. Cut the cucumbers into cubes and transfer to the same bowl.

5. Cut the Adyghe cheese into cubes and add to the vegetables.

In this form, the salad, as a preparation, can be removed in the refrigerator by covering the dishes with a lid or cling film. You can store it from several hours to a day, and fill it up just before serving.

6. Add the dressing and finely chopped parsley and basil, setting aside some herbs to garnish. Stir the salad.

7. Season to taste with salt, stir again and serve.

8. Transfer the dish to a salad bowl, sprinkle with a small amount of herbs on top.

9. Such a salad is good both in itself and will certainly be appreciated by those who adhere to a vegetarianism or a proper nutrition system, and as a side dish, for example, to meat dishes.

Tomato, cucumber and cheese salad can be prepared not only with small cherry tomatoes: take 2-3 large tomatoes and cut them into pieces of the desired size. It will turn out to be no less tasty. And if you add a chopped clove of garlic to the dressing, then a more piquant version of the dish will come out.
