Main ingredients:
Pork ribs - 2 kg.
Salt to taste
For the marinade:
Cane sugar - 5 tablespoons without slide
Worcester sauce - 1 tablespoon
Smoked paprika - 1 tsp
Chile (flakes) - 0.5 tsp
Zira - 1 tsp
Ground ginger - 1 tsp
Nutmeg - 0.25 tsp
A mixture of five Asian spices (star anise, fennel, cinnamon, cloves, Sichuan pepper) - 1 tsp
For BBQ Rum Sauce:
Ginger - 4 cm
Garlic - 3 cloves
Cane sugar - 5 tablespoons
Rum - 60 ml.
Mustard - 1 tsp
Wine vinegar - 3 tablespoons
Ketchup - 200 grams
Soy sauce - 3 tablespoons
Chile (flakes) - 1 tsp
Water - 100 ml.
Course of action:
1. Prepare the required foods. Cane sugar can be substituted with honey or maple syrup. If there is no Worcester sauce, replace it with soy sauce.
2. It is advisable to prepare barbecue sauce in advance.
3. To do this, grate a piece of ginger. Pass the garlic through a press.
4. Combine all ingredients for the barbecue sauce in a saucepan. If the mixture is thick enough, add water.
5. Put the saucepan on a minimum heat and, stirring constantly, boil the mass. The hot mixture will become jelly-like in consistency. After cooling, it will thicken. It will take 40-60 minutes to boil the sauce.
6. Rinse the ribs under running water and pat dry with a paper towel.
7. Combine all marinade ingredients in a bowl.
8. Salt the meat. Using a culinary brush, spread the marinade over the entire surface of the piece. Wrap the ribs in foil and leave to marinate for about six hours. The most convenient way to do this is at night.
9. Wrap the marinated ribs in another sheet of foil, put on a baking sheet and put in an oven preheated to 180-190 degrees for 2 hours.
10. After a while, remove them from the oven, remove the foil and use a culinary brush to reapply the marinade on all sides.
11. Place the baking sheet in the oven again. Within an hour, turn the ribs once and brush again with the sauce.
12. Readiness is determined by the meat that easily separates from the bones.
