Broccoli salad with chicken and tomatoes

Today I want to share with you one of my favorite recipes - I suggest making a simple, healthy and delicious broccoli salad. If boiled or steamed cabbage itself is not to your liking, it tastes brighter in the salad. Everyone will be happy to eat such a dish, because we will chop the vegetable inflorescences finely so that we do not immediately understand what kind of green ingredient it is.

Another important point is that the salad contains chicken. It must first be baked with spices, herbs, marinade - the brighter the taste, the more interesting and better the dish will turn out. And vegetables will give it freshness.

Ingredients:

Broccoli - 60 g

Chicken fillet - 250 g

Fresh tomatoes - 2 pcs.

Fresh cucumbers - 2 pcs.

Vegetable oil - 1 tbsp.

Lemon juice - 1 tsp

Salt, pepper - to taste

Description:

1. Prepare all the required ingredients according to the list. Choose fresh broccoli with a beautiful green color. For baking chicken, you can use a sweetish marinade with the addition of honey, the taste of the salad will end up being very harmonious.

2. Bake the chicken fillet in advance, or, in extreme cases, boil it. You can use any other part of the carcass - drumsticks, thighs, etc. Cut the chicken into small cubes or simply disassemble it into fibers.

3. Broccoli inflorescences, then rinse and dry, then transfer to a saucepan with boiling water. Boil the inflorescences literally 2-3 minutes, then remove with a slotted spoon and let the broccoli cool.

4. Chop the broccoli with a knife, load the green cuts into a salad bowl. Then add the chopped chicken to it.

5. Wash and dry fresh tomatoes. Cut them into small segments, add to a salad bowl.

6. Wash and dry the cucumbers, cut off the tails on both sides. Cut vegetables into slices or small slices, load into salad.

7. Season everything with a spoonful of oil and a little lemon juice, mix. Toss in a pinch of salt and pepper.

Serve broccoli salad with chicken and tomatoes to the table immediately, you can decorate with mint leaves. It will suit even for lunch, at least for dinner - it has few calories, so don't worry about your figure.
