A relatively dietary option to cook vegetables for a side dish is to bake in the oven. Soft and tender through and through, soaked in delicious fumes, eggplants with potatoes diversify the diet, replacing cereals, pasta, and will be a good accompaniment to meat products. Ingredients:

Eggplant - 1 pc.

Potatoes - 4 pcs.

Sour cream - 50 g

Vegetable oil - 30 ml

Garlic - 1 tooth

Salt, hot pepper, fennel seeds - to taste

Step by step recipe:

Step 1 - To cook eggplant with potatoes in the oven, take the foods listed. Eggplant variety - at your choice: dark traditional, striped purple, yellow, white, or another find of selection. According to the same recipe, potatoes are baked along with pumpkin, zucchini, squash, mixed assorted.

Step 2 - Vegetables will get their main flavor from a simple but mouth-watering dressing. In a convenient container, mix thick sour cream or dense village cream, lean refined oil, passed through a press or finely chopped garlic and spices: throw in a pinch of salt, black or other hot pepper and dosed in spicy-sweet fennel grains (with fish and delicately cooked vegetables - that what you need).

Step 3 - Cut the peeled potato tubers into cubes that are not too large, but about the same size. Since potatoes are much harder than eggplant, soften longer with any heat treatment, we cut them smaller.

Step 4 - First chop the clean eggplant into thick circles, then each into four equal parts.

Step 5 - Thoroughly mix the vegetable slices with the sour cream-oil mixture, cover each piece of potatoes and eggplant with sticky sauce. We place it in a fireproof mold, level it, do not ram. We cover and send to the oven, which was hot by that time. We bake the dish in the oven for about half an hour at a temperature of 180 degrees. If you want to dry, charcoal the crust, then keep the last 10 minutes under the grill and without a lid.

Step 6 - Serve hot baked eggplants with potatoes, on your own with fresh herbs or as a side dish for meat, poultry, fish.
