Don't think this dish looks like chicken fricassee. Preparing the breast is much easier and in one piece: you just need to grind it, completely immersed in milk. Tenderness, juiciness and delicate taste will become evident from the first bite. Of course, the chicken can be served hot with some side dish, but it is even better to cool it down without removing it from pot, and then cut into slices, collect sandwiches or for a solemn occasion add meat plate.

Ingredients:

Chicken breast - 400 g

Milk - 200 ml

Butter - 40 g

Dill - 30 g

Salt, black pepper - to taste

Step by step recipe:

Step 1 - To cook chicken breast in milk, take the foods listed. It is preferable to use fresh meat, if necessary, defrost the semi-finished product beforehand. Milk is suitable for any fat content, and be sure to add a piece of butter to enhance the aroma, sweetish notes and softness. Also have a spacious ceramic or other refractory container with a lid on hand - the liquid (in our case, milk) should cover the meat almost to the top.

Step 2 - Generously sprinkle the clean fillet (boneless breast) with salt and ground hot pepper - rub in the spices on both sides. We keep in the cold for half an hour or more. We do not beat off the meat, we leave the original thickness.

Step 3 - At the bottom of the heat-resistant mold / pot, lay branches of fresh herbs: dill, parsley, any not too fragrant vegetation are suitable. The goal is to prevent the meat from sticking to the bottom and burning. In addition to dill, you can throw a chopped onion.

Step 4 - Put the seasoned and spiced chicken on the "green pillow".

Step 5 - Put in a portion of quality butter. If you want to reduce the calorie content of the dish, exclude this product.

Step 6 - Fill with milk, cover the pot and send it to the hot oven on the pallet. We keep the first 10-15 minutes at 200 degrees to heat and bring the milk to a boil. Then we reduce the heating to 180 degrees and bake for another 15-20 minutes. If charred or more browned is required, at the end of the process, remove the lid and place under the grill for the last 5 minutes.

Cool the tender chicken breast in milk, cut into slices and serve. Easy, fast and delicious!
