Creamy pumpkin soup with cream

For fans of pumpkin and mashed first courses, I offer a simple recipe for their daily diet. A minimum of available products, an elementary technological process plus a delicate silky texture and a sweet-creamy taste of the cream soup itself - this will please both adults and children.

On your personal choice, crunchy bacon slices can be added to the creamy pumpkin soup with cream, dried pumpkin seeds, spicy thyme or bitter sage, bread crumbs or garlic toast.

Ingredients:

Pumpkin - 400 g

Onions - 1 pc.

Garlic - 2 teeth

Cream 10% - 200 ml

Water - 100 ml

Vegetable oil - 20 ml

Butter - 20 g

Salt, black pepper, nutmeg - to taste

Greens and pumpkin seeds - for serving

Step by step recipe:

Step 1 - To make a creamy soup at home, take the foods listed. If possible, choose sweet and juicy pumpkin varieties, even to the detriment of the brightness of the color - the first dish will come out less saturated in shade, but much more appetizing, not watery and tasteless. The fat percentage of milk cream is 10-20%. It is also easy to change the concentration: the proportions of water and cream.

Step 2 - Fry chopped onion and a couple of crushed garlic cloves in two types of butter (lean and butter). With moderate heating, bring 4 minutes to transparency. An onion with garlic will saturate the dish with moderate spiciness and make it not like porridge.

Step 3 - Separate the pumpkin pulp. Cut into pieces of any shape and not too large. Since the pumpkin softens very quickly, there is no point in using a grater, just chop finely. Load the orange cuts for the sautéing. Stir and oil for another 3 minutes.

Step 4 - Pour in water, boil, reducing the temperature, boil until soft for 10 minutes. Then we pierce to check the degree of doneness.

Step 5 - Puree with a hand blender until smooth.

Step 6 - Return the pumpkin puree to the stove, dilute with hot cream. Salt, pepper, season with ground nutmeg or other favorite spices. Let's try. Let it boil and immediately remove from heat.

Serve creamy pumpkin soup with cream, garnished with fresh herbs and crushed seeds, thoroughly warm and with croutons.
