If you want a rosy banana-flavored pastry, then prepare golden pancakes with banana on kefir for breakfast - the aroma of such a dish will lift even a real sleepyhead out of bed. Sprinkle with honey when serving - it perfectly complements them, however, as well as chocolate topping, whipped cream, etc.

To make the pancakes fluffy and airy, add soda, but not more than 0.5 tsp, otherwise this ingredient will add a bitter taste and the whole dish will be hopelessly spoiled. Soda will react with kefir, filling the dough with air bubbles, but you need to add it with flour, and not in the beginning, so that the reaction of these two components occurs when frying pancakes - then they will turn out very porous. You can achieve the same effect by adding baking powder if you don't have baking soda available.

Ingredients:

Kefir - 1 tbsp.

Chicken egg - 2 pcs.

Wheat flour - 1.5 tbsp.

Vegetable oil - 80 ml

Soda - 0.5 tsp.

Banana - 2 pcs.

Sugar - 3 tablespoons

Salt - 2 pinches

How to cook:

1. Rinse the chicken eggs and break them into a deep container, add kefir of any fat content there, add salt and granulated sugar. The more acidic the kefir is, the more violent the reaction with soda will be, therefore, the pancakes will turn out to be more magnificent. You can use a fermented milk drink for two or three days. Whisk the entire contents of the container with a whisk until smooth. At the same stage, you can add a flavoring agent to the dough that does not interrupt the banana taste, but emphasizes it: ground cinnamon, vanilla, a couple of drops of orange or lemon extract.

2. Peel a couple of bananas, cut into small cubes, or mashed with a fork, if desired. Add to the whipped mixture and stir.

3. Stir in the pre-sifted premium wheat flour and baking soda. Knead a thin dough, dense in consistency - about the same as for charlotte. The recipe indicates the interaction of kefir with soda, so you cannot give this dough a “rest,” otherwise all the bubbles will come out of it.

4. Heat a frying pan on the stove, turning on medium heat, pour in unscented vegetable oil, refined. Warm it up and turn it down to minimum heat. With a tablespoon, place the dough in the form of small tortillas in a pan, fry for about 1 minute until golden brown.

5. Flip the pancakes to the other side - their top will remain slightly damp, do not be alarmed, this is normal. It is advisable to use a silicone spatula to pry the pastry underneath and a fork to hold it when turning. On the other side of the pancakes, fry the same amount of time, but always with minimal heating, otherwise you will get baked goods with an unbaked middle.

Place a gravy boat with honey in the center of the plate or dish, and spread fluffy banana pancakes around it. Serve warm. They are especially tasty with fresh sour cream.
