This recipe for buckwheat beef soup is classic: it's simple, but not very quick to prepare. Today we cook it with one of the healthiest cereals - buckwheat. The soup turns out to be not only rich and tasty, but also nutritious, and what else is needed in the cold season to warm and nourish the body?!
Sometimes I cook another version of this dish - with dumplings. The dough for them is very simple - mix the egg and some spices, add flour until the mass becomes viscous. 10 minutes before the end of cooking the soup, I dip the pieces of dough into the boiling broth with a teaspoon.
Ingredients
Potatoes - 400 gr.
Carrots - 1 pc.
Bulb onions - 1 pc.
Vegetable oil - 60 ml.
Beef - 700 gr.
Buckwheat groats - 1/3 st.
Water - 1.5 liters.
Salt and herbs to taste
Step by step recipe:
Step 1 - We prepare the necessary products according to the list. I recommend taking beef on the bone. I used refined vegetable oil, you can replace it with lard.
Step 2 - Rinse the meat well under running water and put it in a saucepan. To make the broth tasty, fill the beef with cold water and bring to a boil. After boiling, you need to remove the foam, reduce the heat to a minimum and cook for about 1.5 hours, until the meat begins to move away from the bones.
Step 3 - Remove the pan from the heat, remove the beef on a plate. Separate the meat from the bones. Strain the broth, as it may contain small bones. We return the meat removed from the bones back, put the pan on the stove.
Step 4 - From peeled and chopped root crops - carrots and onions - we make frying.
Step 5 - Lightly fry in a pan with vegetable oil.
Step 6 - Peel and wash the potatoes. Chop it and add it to the broth.
Step 7 - We sort out buckwheat from small debris, wash it. You can add more buckwheat to the soup, then we get a thick soup, something in between the first and second. We send vegetable frying and buckwheat to the pan. Cook the dish from the moment it boils for 15-20 minutes.
Step 8 - At the end of cooking, salt it to taste.
Our flavored buckwheat beef soup is ready. Pour into plates and serve with any bread or crackers.
