Mashed potatoes are a delicate and satisfying side dish, and also very inexpensive.

Private chef Neil Anthony considers mashed potatoes to be a delicacy that should be served in minimal quantities with a meat dish. Of course, you can take this dish to a new level by adding heavy cream and truffle oil to it, but today we are talking about an economical menu.

Prepare the vegetable puree by adding inexpensive but healthy carrots to the potatoes during cooking, and a pinch of chopped green onions to the finished dish. The garnish will not only taste more interesting, but also look very presentable. And at a cost, one serving will be about 60 rubles.

Ingredients:

Potatoes - 3 pcs.

Carrots - 1 pc.

Milk - 35 ml

Butter - 1 tsp

Green onion (feather) - 1 pc.

Boiled sausage - 2 slices

Vegetable oil - ½ tsp.

Canned green peas - 2 tbsp

Salt to taste

Ground black pepper - to taste

Step by step recipe:

1. Prepare your ingredients. Boiled sausage can be taken with or without bacon, from poultry or pork and beef. The fat content of milk is at your choice; it is more profitable to buy butter by weight.

2. Peel potatoes and carrots, cut randomly, place in a saucepan. Pour in a small amount of water, but so that the vegetables are covered with it. Put the saucepan on fire, bring the contents to a boil, add salt to the water. Then reduce heat, cover, and simmer until tender (about 20 minutes).

3. Drain the water and rub the vegetables through a sieve or mash with a potato grinder. Add the butter and stir to melt from the heat of the vegetable mass.

4. Add milk and chopped green onions, stir. Place a lid on the pot and keep the puree warm until serving.

5. Fry 2 slices of cooked sausage in a preheated skillet with a little vegetable oil.

6. Serve warm with grilled sausage and green peas.
