New Year's "Olivier" in the shape of a pig

Traditions have been preserved in most families since Soviet times when, while watching the film "The Irony of Fate, or Enjoy Your Bath!" the ingredients for the "Olivier" and "Herring under a fur coat" salads were cut. However, these salads were popular not only on New Year's Eve.

"Olivier" became different even with the advice, as well as in the joke: "Dear editors! Your Pineapple with Shrimp salad is very tasty, however, we have replaced pineapples... ". In it, hazel grouses, capers, pressed caviar and some other ingredients were replaced with products available and known to everyone. But even today, since the perestroika period, it has undergone minor changes, which each the performer of these creations is his own: replacing sausage with boiled meat, adding an apple or fresh cucumber, and so on Further.

This recipe offers a version of the very "Olivier" from the Soviet past (as it was prepared in our family) with a doctoral sausage, when choosing which you should not save on quality, and its design in the form of a pig is a symbol of the upcoming 2019 of the year.

Ingredients:

Canned peas - 240 g

Boiled sausage - 300 g

Pickled cucumbers - 150 g

Potatoes - 400 g

Carrots - 150 g

Onions - 50 g

Chicken eggs - 1 pc.

Mayonnaise - 3 tbsp l.

Ground black pepper - to taste

Salt to taste

Greens - 1 bunch

Raisins - 2 pcs.

How to cook:

Step 1: Prepare the ingredients for the salad. The volume of vegetables ready for cutting is indicated.

Step 2: Peel the onion, rinse with water and cut into small cubes.

Step 3: Peel pre-boiled and necessarily cooled eggs and cut them into not very large cubes, but much larger than onions.

Step 4: Cut pre-boiled and peeled potato tubers and carrots into cubes of the same size.

Step 5: Cut the pickled (or pickled) cucumbers similar to the previous vegetables. If their peel seems harsh, then it is better to peel it first.

Step 6: Cut off a 2–3 mm thick sausage circle and set aside for now. Cut the rest of the cooked sausage in half. Cut one half into cubes similar to vegetables, and grate the other with large teeth.

Step 7: Drain the marinade from canned green peas. Part of peas (2 tbsp. l.) set aside for salad decoration. If you use raisins as a pig's eye, then it is better to pre-soak it in hot water.

Step 8: In a container of sufficient volume, combine chopped vegetables, eggs, peas and sausage cubes. Season with mayonnaise, ground black pepper, salt if necessary. Stir well and place the salad preferably on an oval platter.

Step 9: You can serve Olivier in portions. In both cases, lay out so that the "back" part of the pig is slightly wider and the mound on the "back" is higher.

Step 10: Sprinkle with sausage chips on top. Cut the tail, patch and ears from the deferred sausage circle and attach them to the pig. Steamed raisins (can be replaced with olives) dry with a napkin and lay out in the form of a peephole. Make an imitation of a lawn from greens (fresh frozen looks good too) and deferred peas.

Step 11: New Year's salad "Olivier" in the shape of a pig is ready.
