This is a “cool” snack for a New Year's table, buffet table, banquet, any festive feast, all kinds of parties, and even for evening family gatherings and pampering (in a good sense of the word). Such balls are very addicting, especially during the game “Guess the Color!”, And disappear from the dish as quickly as a handful of deliciously toasted seeds. The process of cooking them is so simple that you can even attract young chefs to it.

Ingredients:

For the test:

Processed cheese - 200 g

Wheat flour - 320 g

Chicken egg - 1 pc.

Ground paprika - 1 tbsp l.

Ground cayenne pepper - 0.33 tsp l.

For filling:

Green olives - 1 can

Black olives - 1 can

Additionally:

Chicken egg - 1 pc.

White sesame - 1 tsp l.

Black sesame - 1 tsp l.

How to cook:

Step 1: Prepare a simple set of ingredients for making cheese balls. To add more excitement to the appetizer on the night of the New Year's celebration, it is better to take olives in two colors and always pitted. Processed cheese can be taken with any flavoring additives (creamy, with ham, herbs), but with a pasty consistency. It is usually sold in small trays. But it is also found in briquettes of a rather delicate structure - this one can also be safely used.

Step 2: Mix the melted cheese and chicken egg with a whisk until smooth. The use of pasty cheese eliminates the need for blenders, combines, etc.

Step 3: Add ground paprika and cayenne or red hot pepper, mix thoroughly. You can play with spices according to your taste preferences. Work well: a mixture of Provencal or Italian herbs, favorite sets and combinations that you usually use when making pizza.

Step 4: Be sure to sift wheat flour, add half of its volume to the cheese mass, mix thoroughly. Then add the remainder in small portions. You may need a little less flour, or, conversely, more, so it is not recommended to add all of its specified amount at once. The reasons for this may be differences in the properties of flour, the volume of eggs, the density of the cheese and many others. Knead a dough that does not stick to hands and dishes, but not too tight. It should be soft and elastic.

Step 5: Drain the marinade from the olives. Be sure to dry them by placing them on a towel or napkin. Pinch off a small piece of dough, the size between hazelnuts and walnuts. Make a tortilla out of it, place an olive in the center and collect the dough into a knot, fasten carefully, forming a ball. As a result, they usually come out in 42-50 pieces.

Step 6: Place the finished koloboks on a frying sheet lined with baking paper at a distance from each other, as the pieces will slightly increase in size during baking. Shake the chicken egg and brush the balls with it using a cooking brush. Sprinkle with sesame seeds if desired; for a change, you can use it in different colors.

Step 7: Preheat the oven to 190-200 degrees. Bake the pieces for 15-20 minutes. It is better to focus on the characteristics of your oven and the appearance of your baked goods. Finished balls should acquire an appetizing blush. Carefully remove them from the paper and you can taste them.

Step 8: These are either cheese balls with olive, or tiny buns, or balls in sesame seeds can be served in as an appetizer for an aperitif on New Year's Eve, to diversify the menu of any festive celebration or feast. They go well with champagne, wine, beer, as well as coffee or tea.

You can prepare them in advance 2-3 days before the New Year or any other planned event and store them in a closed container at room temperature. Preheat in the oven for 2-3 minutes at 180 degrees before serving. Such a buffet appetizer can be laid out with a Christmas tree (as in the photo), then it will effectively stand out among other dishes on the New Year's table.

What about pampering? In our environment with this snack has already developed a tradition - the game "Guess the color!". Before biting into the ball, the estimated color of the olive inside is called. For the loser, you need to come up with tasks that you can write on small pieces of paper and put them in a dark bag, and pull them out, if necessary, like barrels in a loto. Fun guaranteed!
