Lush pancakes can be cooked not only with kefir. It is permissible to use other fermented milk products as a basis, for example, very tasty, tender and airy pancakes are obtained from drinking yogurt. In order for the pancakes on yogurt to turn out lush for sure, you should strictly adhere to the sequence of loading the ingredients, here you can't just put everything together at random. According to the proposed recipe, they do not stick to the pan during frying, they always turn out to be airy, not oily.

Ingredients:

Natural yoghurt without additives - 250 ml.

Egg - 1 pc.

Wheat flour - 250 gr.

Sugar - 3 tablespoons

Salt - 0.5 tsp

Soda - 0.5 tsp.

Cooking oil for frying - as needed

How to cook:

1. Drive one chicken egg into a deep bowl, add the specified amount of granulated sugar. If you like very sweet baked goods, you can increase the amount of sugar. Be sure to add a pinch of salt, it will only enhance the sweetness of the dough.

2. Beat the ingredients with a whisk or mixer until a homogeneous egg mixture with a fluffy “head” is formed.

3. Heat the yogurt in the microwave or on the stove until warm. Watch the process carefully, the fermented milk product should not boil, otherwise it will curdle. Pour warm yogurt into a bowl with the contents, stir.

4. Sift the wheat flour through a sieve in advance to saturate it with oxygen and get rid of impurities. Then pour it into the main composition in small portions, stirring in parallel.

5. When the entire portion of flour is filled in, go through the mass with a hand blender, completely eliminating its lumps. As a result, you will get a rather thick dough that will not flow off the spoon in a stream, but will fall in pieces.

6. Add baking soda and mix again with a blender. There is no need to extinguish it with vinegar, since the dough contains an acidic environment, namely yogurt.

7. Heat the pan to a peak, pour in a sufficient amount of oil. To fry these pancakes, there must be a lot of oil, otherwise they will not rise well and burn (about 3 mm from the bottom of the container). Use a tablespoon to place several small portions of the dough into the skillet. Keep the fire slightly above average, cover the container with a lid. When air bubbles appear on the surface of the workpieces, use a spatula to turn them over to the other side. Fry all mini tortillas this way.

After frying, transfer the fritters to a paper sheet, this will relieve them a little of excess oil. Before serving, sprinkle them with powdered sugar or add your favorite jam, honey, condensed milk.
