Plum compote with pits will appeal to everyone, without exception, but especially to the one who will cook it, because you do not need to have special culinary skills to brew such a fragrant drink. It tastes good both hot and cold. It can be served with ice during the hot season, or it can be supplemented with ground cinnamon and poured hot into cups in the fall. The good news is that the plum harvesting season is long!

Ingredients:

Plums "Hungarian" - 0.5 kg

Warm water - 2 l

Sugar - 100 g

Citric acid - 2 pinches

How to cook:

1. Use fruits of the varieties "Renclode" or "Vengerka" - they are not so sour and you will need much less granulated sugar than for compote from other varieties of plums. If desired, sugar can be replaced with honey of any kind, but it is advisable to add such a product only to the drink cooled down to 35 degrees, otherwise it loses its beneficial properties, leaving only sweet smack.

2. Rinse the collected or purchased fruits in water, remove cuttings and leaves from them. You do not need to remove the bones!

3. Transfer the plums to a deep saucepan or other container in which you are going to cook the compote. You can even use a multicooker by turning on the "Cooking" or "Soup" mode for 20-25 minutes, but subject to pouring hot water into the bowl.

4. Add granulated sugar and other sweet spices if desired: ground cinnamon, vanilla, star anise. Add honey not before boiling the compote, but afterwards - in cups with a slightly cooled drink, and it can be of any kind: May, lime, flower, etc.

5. Pour hot water into the container. Adding it hot will shorten the brewing time and vice versa. Try not to add lightly to the edges of the saucepan so that the foam does not splash out during the boil. Place on stove, turn on maximum heat and bring to a boil. Then reduce the heat and simmer the compote for about 10-15 minutes, until the fruits give the liquid their color, taste and aroma. The drink will become colorful, burgundy and opaque.

6. Turn off the heat, put a lid on the pot and steam the contents for about 5 minutes to get the most out of the fruit.

Pour the pitted plum compote into a pitcher / cups / glasses and serve warm or chilled: with ice, cinnamon, fresh mint leaves, etc. Don't forget about fresh baked goods - they will perfectly complement such a fragrant drink!
