An elegant and quick cold appetizer for a festive table - tartlets with red fish. It's so easy to cook that even a schoolboy can handle it, of course, if there is salted red fish in the refrigerator. The filling for the baskets can be salted cottage cheese, coarsely grated cucumber, sour cream of any fat content, but always thick. It should be remembered that the tartlets from the bottom can get wet, therefore it is necessary to prepare such a treat literally 3-5 minutes before serving, you can even lay out delicious baskets for each guest in portions plate.
Don't forget about fresh herbs. It will favorably set off the bright flesh of the fish and add a spicy taste to the appetizer. You can decorate the dish with a slice of lemon - it will not be superfluous in this flavor bouquet.
Ingredients:
Tartlets - 6 pcs.
Salted red fish - 120 g
Cucumber - 2 pcs.
Thick sour cream - 100 ml
Greenery for decoration
Salt and pepper to taste
How to cook:
1. Prepare the food you need. You can buy lightly salted red fish in a supermarket / store or prepare it yourself in at home, keeping it in salt and spices for three days in the cold, periodically draining the allocated liquid.
2. It is permissible to use both wafer and sand tartlets - the latter will remain dense longer.
3. Before preparing a snack, place a piece of salted red fish in the freezer for literally 10 minutes - it will become denser, it will be easier to cut.
4. Blot the fish from excess moisture, cut into long slices. Rinse fresh cucumbers in water, carefully removing spikes and dust from the surface. Cut off the ponytails and slice each vegetable into diagonally diagonal slices to make the slices look neat and attractive.
5. A few minutes before serving the tartlets on the table, put thick sour cream in them, preferably farmer's. It can be replaced with cream or processed cheese, fatty cottage cheese.
6. Insert a slice of fresh cucumber into each basket.
7. Roll the pieces of red fish into roses, place them in the tartlets and press lightly - the sour cream rises in the middle of the created fish flower. Season with salt and pepper to taste, not forgetting that the fish is already salted!
Decorate the cooked baskets with fresh herbs, you can add a slice of citrus. Serve the red fish and cucumber tartlets immediately on the party table, while the waffle base is still wet. You don't need to chill the snack!
