The most delicious citrus treat you can make any time of the year is orange and lemon jam. No one will refuse such a fragrant and mouth-watering dessert, and you can use it in different ways: add to tea, as a filling for pies and pies, prepare various creams with it and cakes. The smell of jam alone can drive you crazy, so don't be surprised if your family asks you to try it even during the cooking process.
Ingredients:
Oranges - 4 pcs.
Lemon - 2 pcs.
Sugar - 2.5 tbsp.
Water - 0.5 tbsp.
Preparation:
1. Prepare the necessary products for making orange and lemon jams with peels through a meat grinder. So that the delicacy does not turn out to be bitter, choose smelling citruses, do not hesitate to smell them when buying. Sometimes they are treated with something with a chemical odor. Such fruits can spoil the whole taste of the jam.
2. Put oranges and lemons in a sink or deep container, scald each fruit with boiling water for 1 minute, but no more, just to pour hot water over the peel, but do not boil it. This is necessary so that the aromatic oil stands out on the surface of the fruit. Cut all citrus fruits into four or eight pieces and remove the seeds, leaving the rind. This is a mandatory process, otherwise you will come across pieces of seeds in the jam.
3. Grind the citrus slices in a meat grinder using a fine mesh attachment (if possible). Proceed gently, being careful not to splash the juice that comes out.
4. Transfer the fruit mass to a cauldron or saucepan with a non-stick bottom. Place on stove, turn on moderate heat. Pour in granulated sugar and pour in warm water. You can use a little more liquids, especially if the oranges were not juicy, but fleshy. Simmer the mass for about 20-25 minutes from the moment of boiling, be sure to cover the container with a lid. Stir occasionally. Then turn off the heat, open the lid and cool the delicacy for 4-5 hours, or even better, leave it to cool overnight. During this time, the crushed rind will absorb the syrup and become more transparent and less bitter.
5. Then bring the jam to a boil again and simmer for about 5-10 minutes. If you want to preserve it, then sterilize the jars and lids, spread the fragrant mass in them hot and immediately cork. Be sure to let the workpieces cool before storing them.
Put the finished oranges and lemons jam in bowls / jars / bowls and serve. It is delicious both hot and chilled.
