A delicious, juicy and healthy salad of celery and apple is especially relevant in late autumn and winter, when fresh vegetables and fruits are practically not available. Despite the apparent astringency of the taste of celery root, the dish turns out to be fragrant and mouth-watering. It can be served as a side dish with meat or fish. Don't forget about fresh herbs - they will perfectly complement the salad and highlight its bright colors.
Those who do not follow a diet can be advised to add dried walnuts or peanuts to the dish, but in small quantities. It is recommended to fill the dish with apple cider vinegar and vegetable oil, preferably unrefined, but without a pronounced smell.
Ingredients:
Apple - 3 pcs. (sweet and sour)
Celery (root) - 1 pc.
Red onion - 1 pc.
Greens - 0.5 bunch
Apple cider vinegar - 1 tsp
Vegetable oil - 1 tbsp.
Salt and pepper to taste
How to cook:
Prepare food. Choose sweet and sour apples so that they add sourness and light sweetness to the taste of the salad.
Get a dense celery root. Peel it, rinse in water. If there is fresh greens on the surface, do not remove them, but cut and rinse them to add to the salad.
First, cut the washed root into plates, then into cubes. Pour into a deep container.
Rinse the apples in water. If purchased at a store, be sure to peel them off. If the fruit comes from your garden, you can skip this step.
Cut the apples into quarters and remove the seed blocks. Then rinse again in water and cut each quarter into cubes. Add to the bowl to the celery slices.
At this point, sprinkle with apple cider vinegar to prevent oxidation of the fruit pulp and it won't darken.
Peel the red onion, rinse and cut into small cubes. Add to container. It can be substituted with green or pickled onions.
Wash fresh parsley or dill, celery (if available), pat dry with paper towels and chop. Add together with salt and pepper to a bowl.
Sprinkle the composition with vegetable oil and mix gently.
Delicious, appetizing and colorful celery root and apple salad is completely ready. Serve it to the table immediately, keeping the maximum vitamins!
