Meat stew with mushrooms

The exact stewing time depends on the natural hardness of the meat and your personal preferences: some love thoroughly steamed and stewed until tender fibers, others more elastic. In any case, juicy pork with mushrooms always delights in taste, does not require red tape from the culinary specialist and is suitable for any side dish.

You can cook in a frying pan or in a cauldron, a thick-bottomed saucepan, over a stove top fire, or in an oven / rustic oven.

Ingredients:

Pork - 400 g

Champignons - 150 g

Flour - 30 g

Onions - 1 pc.

Vegetable oil - 30 ml

Meat broth - 200 ml

Salt, black pepper - to taste

Greens - for serving

To cook meat with mushrooms at home, take the foods listed. If necessary, defrost the meat beforehand. In addition to pork, beef, veal, and other types of meat (sirloin) are suitable.

For the best taste, use a rich, concentrated broth, such as leftover from jellied meat / jelly: it is already seasoned and saturated with spicy aromas. Without stocks of broth, stew the meat in drinking water with the addition of spices.

Cut clean pork into cubes of about the same size, rather large. Sprinkle with wheat flour and stir. Cover with a flour layer to retain the juice during frying and slightly thicken the gravy.

We warm up a frying pan with a board, pour in refined lean oil. After about half a minute, spread the breaded meat into the crackling fat. Fry until light golden brown over high heat for about 3-4 minutes. Turn over.

Add onions, chopped into thin half rings or strips, stir and continue to fry for the next 2 minutes.

Thoroughly rinse the fresh mushrooms from the soil, chop them into arbitrary slices and load them to the already fried meat with onions. Mix again and saturate the mushrooms with oil for another 2-3 minutes. If a lot of moisture is released, evaporate completely.

Pour in meat broth or water, boil, reduce heat and simmer with a constant slight boil from 20 minutes to an hour (according to your taste). We remove the sample, salt and pepper if necessary.

Before serving, add fresh herbs to the dish. We serve tender meat stewed with mushrooms, for example, with pasta and pickles.
