This simple barbecue marinade is suitable not only for pork, but also for lamb, beef, all kinds of game, not the most selective flesh, including those with hard layers. Mineral water - today's medium for marinating meat - will both saturate with moisture and soften the fibers, while leaving no specific aroma and taste. You can choose whatever you like with the additional seasoning.

The recipe is equally relevant both for cooking over an open fire and in an oven.

Ingredients:

Pork - 800 g

Mineral water - 0.5 l

Black pepper, sea salt - to taste

Vegetable oil - 50 ml

To cook a juicy pork kebab on mineral water at home, take the products from the list. Clearly, the meat must be fresh and of high quality.

Mineral water - at your discretion, of any manufacturer, carbonated. In fact, they marinate not only in unsweetened mineral water, but also in all kinds of soda-lemonades.

Leave wood skewers in cold water for 15-30 minutes beforehand, they burn less.

If necessary, rinse the meat pulp, remove excess films and fat. Partially fatty inclusions are needed, with them the kebab is more appetizing and juicy.

We cut clean meat into pieces of the same size - these will be marinated evenly and at the same time, and then baked. You can cut the pork into large cubes. Or follow my example: I chop meat into rectangles. The cubes are placed on one skewer, the rectangles are pierced with two. On a double support, the meat does not twist and it is easier to turn the shish kebab itself.

We lower the blanks in a bowl that does not oxidize. Salt and pepper to taste. Toss in herbs and other spices if desired. Mix, cover each piece.

Fill with mineral water so as to completely cover all the meat cuts. Leave the bowl in a cool place for 30-60 minutes. You can mix the meat a couple of times.

We put the pickled pieces of pork on skewers - if it's a double kebab, then we pierce it in parallel. We put on an oiled dish or wire rack, sprinkle with vegetable oil and on top.

We bake the kebabs in a pre-heated oven at a temperature of 200 degrees for about 20 minutes, turn over once.

We serve rosy pork skewers hot, with sauces and greens.
