We will prepare sweet pies with different fillings from yeast dough, which is kneaded with kefir. The baked goods will turn out to be tender, airy and very tasty. You will not notice how you gobble up the pies one by one. Especially if there is not one fillings, but as many as three at once - with dried apricots, apple-nut and apple-berry.

For the test:
Kefir - 100 ml
Milk - 70 ml.
Chicken eggs - 2 pcs.
Salt - a pinch
Sugar - 2 tablespoons
Dry yeast - 1 tsp
Butter - 60 gr.
Wheat flour - 2.5 st.
For filling:
Apples - 600 gr.
Butter - 60 gr.
Sugar - 100 gr.
Hazelnuts - 100 gr.
Any fresh berry (frozen) - 100 gr.
Dried apricots - 100 g.
Step by step recipe:
We prepare products according to the list required for making sweet pies.
First, we put the dough. Add sugar, flour and yeast to warm milk. Mix thoroughly. Cover the bowl with a saucer or a lid from a small saucepan. We put the container on a saucepan with warm water and leave for 15 minutes.
During this time, the dough will rise with a high hat.
Add kefir, egg and butter to the dough, which must be melted a little in the microwave until soft.
Then add the sifted flour in parts, knead the soft dough that does not stick to your hands. We place it in a large bowl. Cover with a lid or napkin again and return to a warm place.
Let it rise and double in size. It took me 30 minutes. There is just time to start preparing the filling.
Pour dried apricots with hot water and let it brew until soft. If it was too dry, then simmer for a couple of minutes instead of soaking.
Then drain the water, squeeze out the excess liquid. Chop the dried fruit finely, add sugar and stir. The first filling for sweet pies is ready.
Fry the nuts in a dry hot frying pan. Grind.
Peel the apples. Cut into small pieces of the same size.
Heat the butter in a frying pan, load the apples and simmer over low heat, covered with a lid, until soft. Cooking time will depend on the ripeness and variety of the fruit itself. It is necessary to stir them periodically when extinguishing in oil.
Add granulated sugar to the finished apples. You can also add vanilla sugar if desired.
Add nuts to one half of the fruit mass, and berries to the other.
Knead the dough. We divide into 2 parts. Cut each into 8 pieces.
Roll them in flour. Roll out with a rolling pin. We spread the filling generously.
We pinch gently, forming pies, and place on a baking sheet covered with parchment.
Break the egg into a bowl, shake it. Lubricate raw pies with it.
We bake in a preheated oven at 180 degrees for about 25-30 minutes.
Our lush, ruddy pies with different sweet fillings are ready. Let them cool down a bit and serve.
