In the winter season, when we cannot go out into nature and grill fish steaks using the barbecue, I offer an alternative option. My recipe for an amateur. If you like adding citrus fruits to fish or meat, then I think you will like it. Salmon steaks baked with citrus fruits come out juicy and aromatic. Ingredients:
Salmon (fillet) - 450 gr.
Grapefruit - 1 pc.
Orange - 1 pc.
Butter - 80 gr.
Honey - 2 tablespoons
Fresh parsley - 80 gr.
Salt to taste
Step by step recipe:
We prepare the products according to the list required for roasting salmon in the oven. You can use fresh dill instead of parsley.
Before baking the steaks, we need to prepare the marinade. In it, salmon is first marinated, then baked. Cut off the peel from the grapefruit and orange. We cut it off, not clean it with our hands. Because we shouldn't have a white film on citrus fruits.
Now we cut out slices from whole peeled fruits. We do this over a bowl, collect the juice and filter it.
Believe me, if you divide an orange or grapefruit peeled with your hands into pieces, and then peel them from the film, then you will not get such smooth and neat slices.
Melt the butter and honey until soft, but not hot. Combine them with juice. Add salt and mix.
Pour the marinade into a deep, wide bowl that will hold all the salmon pieces. Cut the steak into portioned slices. We spread them with the pulp down in the marinade. We leave for 7-8 minutes.
Transfer the marinated steaks to a baking dish.
We put the salmon in a preheated oven to 170 degrees. We bake for 10 minutes. We do this so that the fish “seizes”, and is not just boiled in the marinade.
We wash the greens, cut off the stems. Finely chop the parsley, add it to the marinade. Fill them with steaks. Put slices of fruit on top of the salmon and put them back in the oven to bake.
Cook for 10-15 minutes, until the fish is golden brown.
Our oven baked salmon steaks are ready. We serve them hot, adding garnish.
