Mackerel -1 pc.

Vegetable oil - 30 ml

Wheat flour - 2 tbsp.

Salt and pepper to taste

Prepare food. Since mackerel is often sold frozen, thaw it at room temperature for 30 minutes, but not completely.

Then cut off the head with the lower fins from the carcass, cut off the tail. Open the abdomen and remove all the insides, the black film from the sides - it is very bitter. Walk with a knife along the ridge - coagulated blood often accumulates there.

Rinse the carcass inside and out. Cut it into portions no more than 2 cm thick.

Pour premium wheat flour onto a saucer or plate. Season each piece of fish with salt and pepper on both sides.

Dip in flour. Breadcrumbs can be used instead, but finely ground. You can also create a batter from chicken eggs, salt and flour by whisking the ingredients in a separate container.

Heat vegetable oil in a frying pan and add fish pieces to it. Remember that it must be very hot, almost boiling. Otherwise, the flour will instantly absorb the oil and sink to the bottom of the container.

Fry the mackerel pieces on each side for 2-3 minutes on medium heat, being careful not to burn them.

Place the fried fish on a plate lined with paper towels to remove excess fat, then transfer to a platter and serve warm. You can diversify ruddy mackerel with different sauces, serve it with a side dish of mashed potatoes etc.
