Okroshka on kefir with mineral water

Making a cold summer soup couldn't be easier. All that is required for the preparation of delicious okroshka is to boil and cool some products in advance. Especially such a chill pleases on hot summer days, with the first spring radish.

This dish is prepared in different versions, the most common method of cooking, of course, with kvass, but today we will consider a recipe no less popular. Okroshka on kefir with mineral water is suitable for dietary nutrition, if not seasoned with sour cream, it has very few calories.

Ingredients:

Potatoes - 5 pcs.

Chicken eggs - 4 pcs.

Radish –6 pcs.

Kefir - 0.7 L

Fresh cucumber - 1 pc.

Mineral sparkling water - 0.9 l

Semi-smoked sausage - 150 g

Fresh herbs (dill, onion) - 1 bunch

Salt to taste

Preparing the ingredients needed to make a cold summer soup.

Rinse the potato tubers and eggs thoroughly. Fill with cold water, put on fire and bring to a boil. It is important that when boiling, the eggs lie tightly with the potatoes; when they are free floating in boiling water, they often burst. Therefore, we pour enough water so that it only covers them. From the moment of boiling, we cook potatoes for 20 minutes, eggs - 8-10 minutes.

We take out the eggs and put them directly into cold water to make it easier to peel them. We also take out the finished potatoes and leave to cool.

Peel the completely cooled potato tubers and eggs.

Cut them neatly into small cubes, put them in a saucepan.

Sausage or any other meat product, you can take boiled sausages / sausages / boiled chicken / pork, peel, if any, from the shell and cut into cubes.

Next, cut the washed and peeled radish and cucumber.

Rinse fresh herbs well, shake off excess moisture and chop finely. We send to the pan with other ingredients.

Then add mineral water and bring the dish to the desired consistency. Salt to taste.

Before serving okroshka on the table, let it brew for a couple of hours in the refrigerator. Serve the fridge with sour cream and rye bread.
