Everyone knows the “Medovik” cake, which is famous for its unique honey taste and aroma. And no one will argue that it turns out to be the most delicious with sour cream, although you can use custard or butter. The sweetness of honey cakes and the slight sourness of sour cream go well and complement each other.

By the way, very little honey goes into the cake, and the honey flavor is achieved through the reaction of this product with soda.

This cake is also called camelina.

Ingredients:

For the test:

  • Butter - 300 gr.
  • Sugar - 300 gr.
  • Honey - 60 gr.
  • Eggs - 4 pcs.
  • Soda - 1 tsp l.
  • Flour - 3 tbsp.

For the cream:

  • Sour cream 30% - 700 gr.
  • Powdered sugar - 200 gr.

Prepare all the ingredients you need to make the cake. Sift the flour through a sieve.

Put butter, honey and sugar in a saucepan. Place it in a water bath. Melt everything.

Add baking soda and stir vigorously. The mass will increase in volume and slightly change the color to a darker one.

Remove from heat and cool slightly until added eggs do not curl.

Then gradually add flour and knead the honey dough. It should stick to your hands a little. No need to add extra flour.

Put the finished dough in a bag and refrigerate for 3-4 hours. During this time, it will lie down and stop sticking.

Divide the dough into several pieces. Now roll out the thin cakes and prick them a little with a fork so that they don't puff up when baking. Bake them in an oven preheated to 180 degrees for 5-7 minutes. They prepare very quickly.

Cool the finished cakes.

For the cream, beat the rich sour cream with powdered sugar until a fluffy, stable cream. The fat content of sour cream should be at least 25%.

Spread the honey cakes generously with sour cream.

Collect the whole cake. Smear the top and sides with cream.

Put the cake in the cold for a few hours, preferably overnight. During this time, it will be well saturated with cream and harden. Cover it with a bowl. Or simply place in a cake box and cover with a lid.

You can then decorate the finished cake according to your taste and the anticipated holiday.

If it is intended only for family tea drinking, then its sides and top can simply be sprinkled with crumbs. Leave one of the cakes for sprinkling and chop.

For a new flavor, chopped walnuts and prunes can be added to this cake. A honey cake with such an addition turns out to be no less tasty. Only fry the nuts a little, and steam the prunes in boiling water.
