Zucchini marinated with honey is one of the quickest, most delicious and popular seasonal snacks. And in summer and autumn, these vegetables are also one of the most inexpensive, you can buy them in any supermarket or market. If you have never cooked quick pickled zucchini with honey, then you should definitely do it. They are very tasty and go well with absolutely any side dish and meat dish.

Ingredients:
Zucchini - 500 g
Honey - 1 tablespoon
Soy sauce - 2 tablespoons
Lean oil - 3 tablespoons
Wine vinegar - 3 tablespoons
Salt to taste
Ch.m. pepper - taste
Garlic - 1 clove
Cilantro - a few twigs
Step by step recipe:
Prepare the food you need. Wash the zucchini and greens, dry. The main vegetable must be young, with a transparent and juicy seed, otherwise you should not cook from overripe, slightly cottony, as it will not taste good.
Cut off the ends of the courgette on both sides, cut it into thin slices, and put in a deep plate. Sprinkle with a little salt on top and leave for 30-45 minutes. During this time, excess liquid will stand out - drain it. If there is any salt left, it is better to rinse and discard the zucchini in a colander to drain all the water.
In a deep bowl, combine the soy sauce, oil, vinegar and honey until smooth.
Cut the garlic into thin slices or pass through the garlic. Add finely chopped herbs. If you don't like cilantro, replace it with parsley or dill.
Pour the dressing into the zucchini, mix everything well, leave to marinate for 2 hours. Stir occasionally to marinate all the slices evenly.
After a while, more juice will stand out and the zucchini will be completely covered with marinade. Now you can taste it. If there is not enough salt or acid, add to taste. By the way, you can add some hot pepper if you like hot snacks. Leave the zucchini to marinate for at least another hour.
After the specified time, drain the marinade. Serve the honey-soaked zucchini as a side dish or as a cold snack with fried or baked meat.
