Incredibly fragrant blackcurrant jam is not only a tasty treat, but also very healthy sweet "medicine", which is given as the prevention of colds and ARVI in the winter, along with hot tea. Blackcurrant contains vitamin C, which is why it is so important to feed your loved ones with this colorful jam for breakfast. The treat is ideal for serving with shortbread or toasted toast, with baked goods or butter sandwiches.
Jam is prepared in just 20-25 minutes. Since the currant itself is an acidic berry, you do not need to add citric acid or juice. The dessert is stored in the refrigerator for up to 6-7 days, it is advisable to use a jar or container with a lid for this.

Black currant - 400 g
Granulated sugar - 200 g
How to cook:
Prepare food.
Rinse black currants in water, sort thoroughly, removing unripe or spoiled berries. Cut off the ponytails with scissors if they are too long.
Pour them into a cauldron or ladle with a non-stick coating. There is no need to add water - the currants will release juice when heated.
Pour in granulated sugar, mix everything carefully and place the container on the stove, turning on maximum heat. Watch out for its contents, as during the boil, a copious foam forms, which can splash over the edges.
As soon as the currants release their juice, reduce the heat to medium. Cook for about 15-20 minutes until the berries are soft - they should all burst.
As soon as this happens, turn off the heat and put the container out in the cold, or transfer the currant jam to a bowl and cool. Then grind into jam with an immersion blender.
If you want to preserve for the winter, then you should create such a blank from fresh currants and purée hot, scalding the cans and iron lids in advance. Then you need to pour the jam into a cauldron or saucepan, heat it to a boil and pour it hot into the prepared container, immediately seal it with a preservation key and allow to cool at room temperature. After cooling, it will become thicker.
Place the blackcurrant jam in a jar or container with a lid. Serve warm or chilled with a fragrant baked goods, hot drinks or with toasted toast, croutons.
