Mixed meat hodgepodge with potatoes

Men are very fond of such a hearty dish as a combined meat hodgepodge with potatoes. Still, because it is delicious, and aromatic, and rich. And it is not difficult to cook it, it only takes a certain set of ingredients and time, since the meat is boiled first. Traditionally, hodgepodge is cooked on beef, today we will cook it in pork broth, it is no less tasty than beef. Potatoes will add additional satiety to the soup. So, let's prepare.

Ingredients:

Potatoes - 5 pcs.

Carrots - 1 pc.

Bulb onions - 1 pc.

Pickled cucumbers - 2 pcs.

Pitted olives - ½ can

Tomato paste - 1 tablespoon

Sausage - 100 g

Pork on the bone - 700 g

Sausages - 4 pcs.

Fresh dill - ½ bunch

Vegetable oil or lard - 3 tbsp.

Water - 2.5 liters

Salt to taste

Step by step recipe:

Prepare the required ingredients according to the list. Meat on the bone can be anything - pork, chicken or beef. For a special aroma of hodgepodge, I take smoked sausage, half-smoked sausage is also suitable.

Rinse the meat, cut large pieces, put in a saucepan. Cover with cold water and put on fire. Bring to a boil. Then skim off the foam and reduce heat to low.

Cook the meat until tender. Pork - 40-50 minutes, chicken - 25-30 minutes (we cook the soup carcass much longer, about 2 hours), beef - 2-2.5 hours.

Remove the meat on a plate to cool, strain the broth and return the pan to the fire. Peel potatoes, rinse and chop finely. Add to broth.

Peel the onions, chop finely. After heating vegetable oil or lard, fry the onion slices for about 3-4 minutes, until golden brown.

Chop the cucumbers on a coarse grater. Add them to the fried onions, followed by the tomato paste. Simmer for another 5-6 minutes, stirring occasionally.

Now add the vegetable fry to the broth. Cook the dish for another 15 minutes.

Separate the meat from the bones. Cut it into cubes.

Remove the sausages from the shell, cut them and the sausage into thin slices.

Send the meat and sausages to the broth.

Cook the hodgepodge for another 10 minutes. Add finely chopped fresh herbs and olives 5 minutes before cooking. Season with salt to taste and remove from heat.

Let the soup simmer in a saucepan before serving. Serve hot meat hodgepodge to the table, serving with lemon wedges and, of course, with sour cream.
