Airy, with the aroma of tropical fruits (lemon and banana), the pie, I am sure, will cheer up sweets and lovers of homemade baking. If you want to get a "fluffy" crumb, like in my photo, be careful with whipping. Work with a powerful mixer and for at least two to three minutes at maximum speed.

Ingredients:

Flour - 180 g

Sugar - 120 g

Eggs - 3 pcs.

Vanilla sugar - 5 g

Lemon zest - 5 g

Baking powder - 5 g

Banana (large) - 1 pc.

If you decide to please your loved ones with sweet pastries, take the products from the list. Banana - one large or one and a half to two medium size. Sorts "Baby" need about five.

Additional flavors in this recipe are vanilla sugar and lemon zest. With them, the banana cake is filled with magical smells. But, if desired, add ground spices, honey, nut butter, sea salt.

The container can be of any configuration, heat-resistant. I advise covering with oiled parchment: it is easier to separate the fruit layer and the cake itself.

Combine eggs, vanilla sugar and granulated sugar in a spacious bowl. I will say that the crumb is very sweet. Vary the sugar dosage from 80 to 150 g to your liking.

Beat for a couple of minutes with a mixer, let the sugar crystals dissolve and the whole mixture increases in volume. We need a light, uniform foam.

Throw in the lemon zest, shake. Remove only the top layer of the citrus peel, without the white part, which is bitter and can ruin the baked goods.

Pour in wheat flour with baking powder. Knead smooth, pouring dough. We remove all the clots.

Cut the bananas lengthwise into plates. We put them on the bottom of the mold with oiled baking paper.

Can be cut into circles, cubes. After baking, these bananas look like dried ones.

Fill the fruit with dough. Cover the entire area evenly. We bake at 180 degrees in a pre-heated oven for about 30 minutes.

We check the crumb for dryness with a torch.

Cool, carefully remove, turn over and separate from the paper.
