Tallinn-style herring: the taste won me over (and why didn't I know about this recipe before?)

As it turned out, Tallinn-style herring is a very popular dish at home. And why didn't I know about this wonderful recipe before? After seeing him once, I decided that I would definitely try it. To begin with, I made a small portion. The taste won me over, so I am happy to share the recipe with you.

Delicate creamy jelly with slices of slightly salted herring and fresh taste of herbs. Optionally, you can add fresh diced cucumber to the aspic for texture.

I prepare the necessary products: sour cream, salted fat herring, gelatin, green onions, dill, parsley. I use sour cream 20% fat.

Soak the gelatin in water and leave it to swell. Then I heat the mixture until the gelatin powder is completely dissolved. This can be done in the microwave or on the stove.

Chop green onions, parsley and dill.

I cut the fish into fillets. To do this, I cut off the head and draw it with a sharp knife along the spine from the side of the back.

From the side of the head, I separate the thin skin on both sides and remove it from the carcass, pulling it down to the tail.

I run my fingers along the spine, separating the fillets from the bones, and unfold the herring like a book.

Separate the fillet on the other side in the same way. I remove the ridge along with the rib bones and caudal fin.

I cut off a part of the abdomen with bones, separating the fillets from each other. I check for any remaining bones and remove them.

Cut the finished herring fillet into cubes, 1x1 cm in size.

Put the sour cream in a container of a suitable size, add grated nutmeg (optional).

I pour in the prepared gelatin concentrate there.

Add chopped herbs and herring cubes. I stir it.

I transfer the mass to portioned molds. For this I use a silicone mold for making muffins.

I cover the structure with plastic wrap and leave it in a cool place to solidify overnight.

Before serving, I free the aspic from the molds and serve it along with crackers, chips and toasted bread.

Lovers of herring should like this unusual Tallinn-style jellied one. If you are worried and afraid to prepare it for the festive table, I recommend that you first prepare a small portion for a sample.
