Beef stroganoff can be made not only from meat. For example, it will be very tasty from beef liver. This option will go well with any side dish. The main thing is to properly fry the offal so that it turns out to be juicy, soft and tender.

Liver gravy is prepared on the basis of sour cream. For brightness and sourness, add a little tomato paste. And for aroma, we throw onions into the sauce. A small amount of spices are used, the liver should be cooked in its own juice - this is the basic rule.

Ingredients:

Beef liver - 300 gr.

Sour cream - 150 gr.

Tomato paste - 1 tbsp

Bulb onions - 1 pc.

Flour - 1 tbsp.

Water - 100 ml.

Vegetable oil - 3 tbsp.

Greens - for serving

Salt, pepper - to taste

Prepare all the foods on the list. Place the liver in the freezer compartment in advance so that it freezes a little.

Start preparing the gravy first.

Remove the top layer from the onion head. Cut the vegetable into small squares, put in a hot pan, previously greased with vegetable oil. Fry the onions over medium heat until translucent and soft.

Then add flour, mix.

Then add sour cream and tomato paste.

Pour in water. Now stir thoroughly until the tomato paste and sour cream are completely distributed over the liquid. Season the gravy with salt and pepper. Simmer it over low heat for 2 minutes, stirring constantly.

Cut the frozen liver into thin strips of equal length.

Put a separate frying pan on the fire, pour in the oil. Heat it well and lower the liver strips. Fry over maximum heat for literally 3 minutes on each side, then sprinkle with salt and pepper. You do not need to fry the liver longer, otherwise it will become dry.

Pour the prepared sauce over the liver, stir. Cook over moderate heat for another 7-10 minutes.
