Chicken cooked in milk is an everyday dish that is great for both lunch and dinner.
I saw this recipe for a long time in Jamie Oliver's culinary show, who praised it very much and recommended it for cooking. For several years now I have been preparing such a chicken for my family quite often. I added a little fresh thyme on my own, in my opinion, it is just made for chicken and lemon. The latter, by the way, brings a delicious aromatic citrus note, so it just needs to be added. So is garlic, it also complements this tandem. Use milk with a higher percentage of fat, then the resulting sauce will be thicker. But don't replace it with cream.

Ingredients:
- Chicken - 1.5 kg
- Milk - 500 ml.
- Butter - 50 gr.
- Garlic - 4 cloves
- Lemon - 1 pc.
- Thyme - 6 branches
- Ground black pepper - 2 pinches
- Salt - 1 tsp l.
Prepare all the ingredients you need. You can use the whole chicken by cutting it into pieces, or just the breast / legs. I took a small chicken, cut it into pieces, and set the skeleton aside for making the broth.
Use quality, high-fat butter. Thyme, if present, add fresh, or replace with dried oregano. Many add a pinch of curry powder and turmeric for color and flavor.
If you cook this dish only from chicken fillet, then reduce the baking time to 15-20 minutes. You can bake the whole chicken by placing it in a deep heat-resistant dish, but then you will need to increase the cooking time in the oven and pour sauce over it from time to time.
However, if you decide to cook a whole carcass, then choose a small chicken, weighing up to 1 kilogram, which can be cut in half along the ridge, fried on both sides and then baked in the oven in milk.
Rinse the chicken and pat dry with paper towels. Divide it into portions.
Rub chunks of meat with salt and pepper.
Peel the garlic. Cut the zest from the lemon into long strips.
Add butter to a suitable heavy-bottomed dish, melt it and place the chicken. Fry on both sides over medium heat.
It is convenient to take dishes that can be placed in the oven. If not, cook in a regular skillet, and then transfer the fried chicken to a baking dish.
Add strips of lemon zest, whole cloves of garlic and thyme leaves to the meat. Cook for another 1 minute for the garlic to release its flavor.
Pour in milk, bring to a boil. Season with salt to taste and place the container with chicken in a preheated oven to 180 degrees for 30 minutes.
Remove the finished dish from the oven. Serve the chicken in milk sauce with your favorite side dish. Perfect fit rice or mashed potatoes.
