Ceramic pots soften hard vegetables, root vegetables, even the toughest meat. In addition, if you choose a gentle cooking mode without frying, a large amount of fat, and you don’t like to waste time on long culinary chores, then the pots are a godsend.
Ingredients:
Pork - 400 g
Potatoes - 100 g
Eggplant - 100 g
Zucchini - 100 g
Carrots - 50 g
Onions - 50 g
Tomato - 50 g
Garlic - 2 teeth
Vegetable oil - 30 ml
Salt, black pepper, bay leaf - to taste
Greens - for serving
Step by step recipe:
Step 1 - Take the pulp of fresh pork or other meat, as well as seasonal vegetable platter, spices, some vegetable oil. You can stew in one large ceramic pot for the whole company, or in several smaller ones (portioned). If there are no lids, stock up on parchment, foil or dough - it is important to seal the contents for a long time.
Step 2 - Pork leg or another piece of meat without my bone, wipe it with a napkin and cut into rather large pieces. Mix with refined vegetable oil, salt and ground hot pepper. Feel free to expand the list of seasonings to your liking.
Step 3 - First, lower the meat pieces to the bottom of the refractory containers.
Step 4 - Add diced potato tubers, diced or otherwise chopped carrots plus onions. Press the vegetables to fit more inside each pot. Juice will stand out in the oven, and all components will noticeably settle.
Step 5 - Next, chop the zucchini and eggplant into small slices - ram and cover with the next layer. We easily crush the peeled garlic cloves and throw them on top.
Step 6 - For a slight sourness, leave a couple of tomato circles, for a spicy aroma - a few bay leaves. Pour in salt, pepper, pour about 100 ml of boiling water into each pot and install the lids. We transfer the pots to a tray / baking sheet (part of the gravy will certainly pour out) and put in an oven that is hot by that time. We keep at a temperature of 180 degrees for about 45 minutes. The time depends on the hardness of the meat, the size of the cut.
Step 7 - Serve hot meat with vegetables in pots, adding fresh herbs.
