Fried eggplant with garlic and tomato is one of the favorite seasonal dishes of many families. This appetizer can be served hot or cold. It is prepared quickly, but it looks very beautiful outwardly, it is not a shame to put it on the festive table.
By the way, they eat such a snack almost first. Spicy eggplants with tomatoes go well with boiled potatoes and absolutely any meat dish.
Ingredients:
Eggplant - 2 pcs.
Large tomato - 1 pc.
Mayonnaise - 1-2 tablespoons
Garlic - 1-2 cloves
Flour - 3-4 tablespoons
Salt to taste
Ch.m. pepper - optional
Vegetable oil - 5-6 tablespoons
Greens - for decoration
Preparation:
1. Prepare the food listed for the snack. Wash the vegetables under running water, pat dry with paper towels.
2. Cut the eggplants lengthwise into thin slices, add a little salt to them, leave for a couple of minutes - the salt will draw out the bitterness.
3. Heat refined odorless vegetable oil in a frying pan, roll each eggplant slice in wheat flour, fry until tender. As a rule, 1-1.5 minutes on each side is sufficient.
4. Place the fried slices on thick paper towels to remove excess oil.
5. We take mayonnaise of good quality, from our favorite manufacturer. Peel one or a couple of garlic cloves, squeeze them into the sauce, stir. This will be our spread.
6. Cut the tomato into quarters, remove the seeds, cut into thin slices.
7. Slightly cooled eggplant, grease with garlic mayonnaise, spread a piece of tomato, roll it into a tube. We do the same with the rest of the products. For beauty and taste, you can wrap a sprig of greens in each roll. Parsley and dill go well with blue ones, although I also like cilantro and basil in this appetizer.
8. We serve ready-made fried eggplants with garlic and tomatoes as an appetizer for a family dinner or for a festive feast. Delicious both hot and cold. Enjoy!
